Aurag Bali is Assistant Vice President, Food & Beverage at Shangri-LaHotels and Resorts, based in the group’s corporate office in Hong Kong. In his role, Anurag is responsible for food and beverage at all operating hotels and new developments in Hong Kong, Taiwan, Japan, Philippines, Australia, Fiji and Sri Lanka. Supporting food and beverage strategy through operational and culinary aspects. With the respective operation team members, he also develops brand standards for food and beverage, maximises opportunities for long-term return on investment, and identifies culinary trends. Over the years, Anurag has been actively involved in the opening of Shangri-La hotels and restaurants in Hambantota, Colombo, Doha, New Delhi, Bangalore, Taipeiand Xiamen ,and will be very hands-on with upcoming projects at the group’s new properties in Bali, Melbourne and Shanghai. Anurag has more than 18 years’ experience in the food and beverage industry. Before joining the Shangri-La group, Anurag was the executive chef of Fairmont Hotels & Resorts’ properties in India and Egypt. In addition, he has held leadership positions with Svenska Hotels, Berggruen Hotels ,and Taj Hotels. Anurag holds certifications in Hotel Management and Catering Technology. He has been featured television host of India’s version of “Ready steady cook,” a competition series, which aired in different countries about gourmet chefs creating appetising dishes from mystery ingredients
